TASTING NOTES: This absolutely stunning Gyokouro by Yoshiniro Koyama at Koyama Tea Farm is a classic example of organic shaded Uji tea. Made from single cultivar Gokou which is prized for its full bodied, deep umami flavour. A fantastic cultivar for shaded teas.
The appearance of the tea leaves are a beautiful deep imperial green which is attributed to the 20 days of shading that occurs before the tea leaves are harvested. This practice boosts the amino acids like L-theanine and limits those converting into catechins. As a result we have a luscious umami driven tea.
The aromatics are leaping out of the cup here. On the nose is seaweed, miso soup and loads of dashi.
The palate is just full of umami. Its buttery, and almost creamy, an olive oil viscosity, soy sauce and even a hint of macadamia nut.
This is a full bodied, big gyokouro. One for the serious tea-heads.
