TASTING NOTES: This is an absolutely STUNNING tea from the Sencha King, Jiro.
An incredibly aromatic asamushi style sencha. Yumesumika is a slightly early-ripening variety grown exclusively in Shizuoka Prefecture. Jiro only very lightly steams his senchas at the beginning of the cultivation process which really locks in the pure expression of the Shizuoka mountain terroir and allows a pure expression of the tea leaf.
A beautiful pale, fluorescent green liquor in the cup. The aroma absolutely leaps out of the cup with this tea. Theres a huge floral violet and cherry blossom aroma mixed classic sencha fresh cut grass, savoury mushroom and a luscious mulberry.
On the palate there is sweet spring peas, cooked baby spinach and a refreshing minerality. Virtually no bitterness, its an incredibly refreshing tea with a subtle, savoury note and a lingering sweetness to finish.
