TASTING NOTES: A classic fukamushi style grown all organically by Shunnosuke at Irie Chaen. Yame is known for producing longer steamed teas of great quality. And this is no exception.
This beautiful mountain tea has a vibrant emerald green appearance with a fresh cut grass, vegetal aroma. The taste on the palate is of stewed greens, fresh spinach, and vegetable broth. There's also a savoury edge of alfalfa sprouts and white pepper. Rounded out by just a touch of tannin.
As a cold brew it works fantastically, it really brings out notes of cucumber, a hint of seaweed and a pretty floral finish.
